So, a little more information. Mostly the foods for the chocobos and what they do.

Xelphatol apples - Deepens Red
Valfruit - Lightens Green
Doman Plum - Lightens Red
Mamook Pears - Deepens Green
O'Ghomoro Berry - Deepens Blue
Cieldalaes Pineapple - Lightens Blue
Han Lemon - Restores original Color

I found a website that seems to be really close on getting your chocobo from their current color to the color you want. I have had to use their calculator twice to get the correct color. In 6 hours I will report again if I succeeded.

I have gotten close, He is Currant Purple right now. A few more fruits and 6 more hours…Guess I will have to wait for tomorrow.

Once again I did not get black. Why do I feel as though I'm writing journal entries. Got Kobold Brown, Kind of like a chocolate brown. More fruits and we shall see in the morning.

Do colors effect speed rating at all, or is it purely a color preference.

If it makes no difference I'm debating on peacock blue, or a green (I used to own a peacock)

As far as I know, colors are just for pretty-ness (cosmetics), and it doesn't actually change anything with the chocobo stat-wise. There might be something I don't know about it, though, admittedly.
